Chocolate Fridge Cake

This is my recipe for a yum-diddly-umptious chocolate cake. Make it and let me know what you think!

For a small one :)

200g milk or dark chocolate
100g white chocolate
150g digestive biscuits, crushed
100g butter
100g golden syrup
As many cherries as you want (I use 1 small pot)
As many marshmallows as you like (I use 1 bag)
A few chopped dried apricots.
Some raisins if you want

Melt the white chocolate first, in a microwave or over a pan of barely simmering water. When liquid pour into the bottom of the baking tray and spread evenly. Put in the fridge while you make the rest of the cake.

Melt the milk/dark chocolate. Melt the butter together with the golden syrup in a saucepan. Mix the chocolate and butter mix together. It might go gloopy but that is okay, it'll still look and taste great when set.

Stir the rest of the ingredients into the chocolate mixture. Pour into the baking tray on top of the white chocolate and press out evenly. I use a potato masher, it's perfect for the job and this tastes so much better than mashed potato!

Put in the fridge overnight to set. Turn onto a chopping board and remove the cling film before slicing into small squares. I usually double this recipe :)
